Salmon

 

I'm a mom with a daughter who can't get enough of raw salmon.

She started eating it frequently from a young age, but it was too expensive to dine out all the time.

So recently, I started buying fresh salmon fillets online, flown in directly from Norway, and preparing them myself.

A 1kg portion of salmon costs around 40,000-50,000 KRW and is more than enough for us to eat over 2-3 days.

First, I slice about a third of the fillet and serve it immediately to be dipped in soy sauce.

For the next third, I cure it with salt and wrap it in kelp that has been soaked in water.

I let it sit for 24 hours★ and we eat it the next day.

For the last third, I use it to make soy-marinated salmon, letting it sit for a day or two before serving.

Any remaining meat can be stored in the freezer, to be thawed out(해동하다) and pan-fried into salmon steaks. 

This way, we enjoy every last part of the salmon and not let it go to waste.
